There’s simply nothing better than mass producing Christmas presents in the summer. Produce is cheap and you’ll be thankful to have them ready to go when December comes around!
This year it’s Grandpa F’s Spicy Pickled Beans: a family recipe to share. It makes 4 pints for which you will need:
- 4 heads dill
- 4 cloves garlic
- 1 tsp cayenne pepper
- 1/4 c course pickling salt
- 2 lb trimmed green/yellow beans (add red pepper if desired)
- 2 ½ c each vinegar and water
Instructions: Drop the spices (1/4 tsp cayenne, 1 peeled clove garlic and 1 dill head) into each jar so you’re ready to add the beans. Then pack the beans into 4 pint jars, either in bite sized pieces or as whole beans cut to the length of the height of the jar.
Combine the salt, vinegar and water in a saucepan and bring to a boil. Pour it over the beans in jars, leaving 1/4 inch head space. Remove bubbles. Process in boiling water bath for 10 min. Keep jars upright and allow to cool completely before labelling and storing.
They are so good you could eat a whole jar in one sitting! When beans are ripe in your neck of the woods, you’re gonna want to try these out.
