Sometimes the best recipes come straight from the head. (Here’s me recording this one for future use!) You know the strawberry fluff from the top of the jam pots, well crazy things happen to it when hunger strikes at 9pm!
Strawberry Daiquiri Ice Cream (Vegan)
- 2 cans of coconut milk (refrigerated)
- 1 cup or a little less strawberry fluff (you may also use pureed fresh berries with or without a little sugar)
- ½ cup frozen strawberries, chopped into small pieces
- 3 tbsp rum
Combine in a bowl with a hand mixer, refrigerate if your ingredients aren’t already cold. Then process in an ice cream maker until frozen yet soft, or freeze directly in a storage container.
Note: I keep my cans of coconut milk in the refrigerator so they are cold, firm and ready for use. The rum will keep this ice cream from going rock solid in your freezer, it will remain at a nice consistency.
The end product is to die for!
In retrospect this could be made with any berries/fruit or variety of jam fluff. I’m envisioning pie apples with brandy and cinnamon. I think the options are endless on this one and I can’t wait to try more!
