Tacos just got a whole lot healthier in my house. There’s no more need for corn or flour shells with the abundance of lettuce I have growing!
Now I know these pictures don’t look like much once the yummy contents are wrapped in purple lettuce leaves, but here you go:
I recommend giving it a try with your choice of ingredient. Just don’t over-heat the ingredients or alternately put something cool or meltable down first on top of the lettuce, so it doesn’t wilt.
I used shredded cheese, ground turkey, red peppers and salsa. It was simple but effective and surprisingly filling.
Just one more way to use up the lettuce!
